The stem holds the entire structure that we can see, the leaves, the fruits, and flowers all depend on the stem for stability. Some types of stems are able to store food, can provide protection (spines), and in some cases even reproduction.  

Just by going through those parts and functions, we can see that an injured shoot system risks losing a lot, increasing the level of damage to it is literally taking the plant closer to death.
